Moon & Back Omakase Dining Experience at Saké The Rocks

Chef Tatsuya Fukuda returns to Saké The Rocks this February. Seven days only. The chef who once worked here before opening four venues across Japan brings his acclaimed omakase back to Sydney.

 

February 23rd to March 1st, at the chef’s counter. This Japanese omakase Sydney won’t see again once March arrives.

Ramen Meets Omakase

Seven courses build to what made Chef Tatsuya’s name: ramen. Not at a lunch counter, but at the chef’s table, torched tableside, then finished with precision.

 

Grilled edamame with matcha salt opens. Salmon tacos follow. Fried chicken with beetroot mayonnaise. Chef-selection sushi: salmon, tuna, kingfish, scallops. Then two half-size ramen bowls arrive. Grilled teriyaki chicken with white soup. Grilled Japanese wagyu beef sukiyaki-style. Yuzu sorbet to finish.

 

Most omakase restaurants Sydney offers keep ramen separate. Chef Tatsuya makes it the centrepiece. Watch wagyu torched at your counter. The theatre matters as much as the taste.

The Philosophy Behind the Food

Chef Tatsuya started in traditional kappo at sixteen. Moved to Sydney at twenty-three. Worked at Saké Restaurant, then became Head Chef at the restaurant overlooking Sydney Opera House by twenty-eight.

 

His observation: dietary restrictions split tables apart. Vegans ate differently. Gluten-free guests arrived already fed. Celebrations became divided.

 

MOON & BACK opened in Japan with one principle: everyone eats the same quality. This week-long collaboration brings that philosophy back to where it began.

Vegan and Gluten-Free Without Separate Menus

The full omakase exists in vegan and gluten-free versions. Not simplified alternatives, but complete seven-course experiences matching the standard menu.
